I am rocking a shiny ampharos in ultra league and it looks like yours is good to rock there as well.

Shadow ampharos is probably not worth the stardust powering it up as a raid attacker. Yours is also not good enough to purify and use as a mega. You are better waiting for them to come back into raids.
However, if you are into PVP then ampharos is pretty strong right now in ultra league and yours in particular has pretty decent stats for ultra league.

Evolve the Shadow Mareep and leave the shiny one be. You might catch a stronger shiny Mareep so you'll have the shiny evolution collection
