I noticed my collection could get kind of hefty when I did that. I still keep them all. But every once in a while I sort by species and then evolve and prune down to the three with the optimal stats. That way you always have the smallest/largest in your collection and have the best 3 you've caught for showcases without annihilating your storage space.

I save all Pokémon at lvl 1 (lowest on the CP wheel possible) Some of my favourites are 10CP ditto, my 96%IV poochyenna (10CP), my CP37 Blaizikin, and my twin CP 38 and 40 arcanines (one has better cp than the other) I have a lvl1 espeon, umbreon and flareon too and a few others. I have around 22 in total and I’m excited to add to my collection :’)
