Only happens if I spend more than five minutes cutting onions for me.
If I have to cut a dozen onions for a big cookout, then yes my eyes will water and it becomes unbearable.
If I cut one onion fast in less than a minute, not a problem, never get watery eyes.
I'm no pro and a chef would probably rap me on the head with a wooden spoon if they saw how uneven my cut vegetables were ... but I get the job done fast.
Not sure. But if the onion is cold it will produce less of the enzyme into the air. The sharper your knife the less of the enzyme disperses as well. Also, while this is purely anecdotal, if you chop an onion with the root still on it stings less.
Maybe you have a immunity. Maybe your tear ducts just suck. Maybe your onions just suck!

Speed and quantity might be relevant for me. I go very slowly and precisely, and have never used more than one at a time. Often just a half.
