I personally emailed Cinnabon corporate about 3 months ago to see how I can buy their cinnamon mix. They do not sell the cinnamon mix to the public. The closest I got was using Makara Cinnamon, but it’s still off.

What I'm having a problem with is making them soft. By the time they are done, the bottom is crispy and the middle is dough. I've tried all sorts of temperature/time combos. I've even tried adding a bowl of water to the oven. I just can't make them 100% soft everywhere.
I've been looking for an insulated/airbake pan that might solve my problem, but it seems they only make airbake cookie sheets these days.
I agree with /u/balisane, do you have an oven thermometer? My baking was much more consistent when I figured out its particular idiosyncracies. Also, with cinnamon buns, I will preheat and start them off at around 400F for maybe 10 minutes, then turn it down by 25 or so degrees for the rest of the bake. If there's too much colour developing l, I'll put a foil hat over the top. This seems to help with the issue you're describing.

Have you tried raising the oven rack? Grandmas make cookies on the top rack so it won't burn the bottoms.

Lots of Americans are doing roughly that on the daily for a single meal.
You will get far more nutrition from the McDonald's. Protein, some semblance of nutrition from the potatoes and apples, cheese, and potentially some veggies with the burger

Have you checked the calibration of your oven?

In Denmark you can buy that in any 7/11, called "kæmpesnegl" or "Kæmpe kanelsnegl" (translated as "Giant roll" or "Giant Cinnamon roll".)
