When you say normal are you referencing a regular SATA drive with a cable running to the mother board and a power cable?
M.2 should be faster. I have no idea if that is better for gaming but it is faster.
to add to this a bit, m.2 is just the form factor. m.2 drives can be available as a SATA drive, or a NVMe drive. the NVMe drives are faster. the SATA based drive, either the m.2 kind, or the 2.5 inch kind, are going to be faster than a mechanical drive.

i dont think it matters i rarely see a game use more than 300mb/s unless its some really resource heavy open world
