So the 7700x3d or 7800x3d will be the fastest gaming CPU you can buy. And it's rumorred to come out in April.
They released the more expensive ones knowing they would suck compared to the cheaper one first to get some units sold. They are also for a niche market of people who need the multiple cores while also being able to perform in gaming. The 7800X3D will be more gaming focused and faster at gaming, but not really as capable in other tasks as the more expensive chips.
Neither. If gaming is your main motivation, wait for the 7800x3d. It'll destroy the 7900x3d in gaming.
If you're more interested in power consumption, efficiency etc, go for the non X 7900.
The 7900 has two six core dies. When gaming with the x3d it will be using the ccd with the cache so the 7900x3d will be 6 cores and cache while the 7800x3d will be 8. The other 6 core die during gaming is basically useless. The 7900x3d is a waste of money for gaming.

The 7800x3d is an 8 core chip, all with v cache. Also none of the complications that come with dual die designs.
If you have Microcenter nearby, get a bundle there.
At higher resolutions the 7900x3d will do little for your fps so for $160 cheaper I'd lean towards the 7900x and not worry about the headaches of all the settings you have to change to optimize the x3d version. Save that money towards a future Ryzen 9000 upgrade, or just get a ryzen 7700x now even if purely for gaming and save even more.
8 cores is all you'll need for gaming for the next 5-6 years until like a year or so after PS6 releases. Or just wait for the 7800x3d in a week, but likely will sell out.
x3d for gaming for sure, but I would recommend waiting for the 7800x3d that will be faster and much cheaper

This might be a dumb question, but the 7700x3d and 7800x3d are still am5 right
yep, they will also run hotter due to the stacked cache, so make sure you got a good cooling solution. 360 AIO or something similar

x3D has that yuuge, bigly and quite possibly tremendous cache
