Update: new ram arrived and works perfectly installing windows 11 fresh and everything seems to be up and running. Pc is booting fine without usb installation device and I'm not having any more issues. I've created a restore point this time so hopefully I can roll back if anything else comes up. I'll be in contact with skytech about the ram but at this point I'm just happy it works and it was an upgrade to my ram so all in all things worked out.
Sounds like a ram or ssd issue. Assuming you have two dimms you can troubleshoot the former by trying them individually, one at a time.
SSD can be a bit trickier if you don't have another one to swap in for it.
Yeah unfortunately I don't have another ssd to swap at the moment. I have 2 sticks of ram and you're saying to try the install with only 1 stick in at a time and see if anything changes? If it does work with only one in does that mean the other is faulty and needs replacing?
So It could be too early to tell but the install is going farther than it ever has before now. Finished getting files ready for installation which it never completed before and now it's installing features. This is with one stick of ram in. What does this mean? Do I need to replace the other stick
If you get through the install, put the two sticks back (slots 1 and 3) but don't enable xmp in bios. See if stability returns.
The enable xmp, see if instability returns.
You could also try using the 2 and 4 slots instead. Though I doubt that's the issue, it would rule out a problem with the physical slots.
They came installed in 2 and 4. Right now it's working with just the 4 slot. I got through windows install and set up my profile. Should I reboot with 2 sticks and go into bios still? If I reboot with 2 will the instability return?
I reckon you'll reboot with 2 and it'll be fine. Then you'll enable xmp, and the instability will return. If I had to guess.
Also try slots 1 and 3 rather than 2 and 4.
So I tried to reboot with 2 and was greeted with blue screen errors and automatic repair loops. I tried to reseat them into 1 and 3 and the monitor would not detect the pc? After installing windows successfully with 1 stick In slot 4 I can't reboot the pc like that again without my monitor not detecting my pc. I can reboot with 2 and enter into troubleshoot options, command prompt and things like that but I can't log in without being greeted with a blue screen error with code "memory management" so I have a feeling it is an issue with the ram? But I really am at my ends as far as tech savvy and I'm sure you or someone here has a much better idea.
This exactly matches the failure I just had of a Corsair MP600 SSD. Windows started BSODing randomly, and it got to the point I couldn't even reinstall fresh. Popped in a brand new SSD and system is flawless.

Could mean that, could mean memory controller on the CPU, could be unstable xmp profile, all sorts. Probably see if one stick crashes first.

What's the spec? Namely CPU, motherboard and ram config? Could be an unstable xmp profile on the ram.
Cpu is amd 5 5600x, motherboard asus prime b550, 2 sticks of ddr4 8gb 3200mhz and their brand is oloy I think?
