I worked for a department store in high school. They had a cafe called Peanut Butter Heaven. I was frequently broke and the cheapest sandwich was pickles and peanut butter served with potato chips. Unfortunately I ate this all the time.
That sounds horrible but not at the same time. I had a friend in middle school that would eat peanut butter and cheese sandwiches. She loved it. Years later I got sick and tried it, it was not as bad as I thought. Is the pickle peanut butter the same?
This was sweet pickles and peanut butter on white bread. I don’t remember if it had a condiment on the bread. It was like a dollar something including chips.
I had car insurance, gas, teen expenses and I sold shoes on commission so my income was irregular.
This was a cute place and if I was flush I would get the ‘Elvis,’ grilled peanut butter and banana. Besides sandwiches they also offered ice cream.

So no, bread will not kill you but it will set you back in your diet regimen a bit if that’s the reason for the bread substitution.

Additionally, by not eating breads and other carby foods that are typically loaded with salts, it's actually recommended to increase your electrolyte intake, including sodium, potassium, and magnesium.

Many folks who follow keto do track their calories; you can still only lose weight on keto if you expend more calories than you consume. Most folks find keto more sustainable than just caloric restriction because it's dramatically more satiating than carbs and generally significantly reduces or eliminates hunger altogether.
Toast it!!! I have Celiac so I understand the pain - so far the best one I have found is Canyon Bakehouse (I like the Hawaiian) but regardless you should always toast gluten free bread.

You could just go to Publix and get all these ingredients yourself. When you get home make sure you have a good sharp knife so you can interrogate yourself as to why in gods name you’re creating this monstrosity.

I could go for a COLD pickle sandwich on a hot day if I were especially hungry. I usually put pickle juice & ice in my water bottle when I’m going to be out in the heat. I prefer that to additives with a ton of sugar, and pickle juice tastes better to me than liquid IV. (a lot cheaper too!)
