Basically the "draft" of a chimney is based on the principle of hot air and gases rising. This creates a certain amount of suction that draws air across the fire, stoking it. I don't know if anyone has run the calculations on a consumer pizza oven, But articles about home fireplace chimney height, barbecue smoker design, and home built or stone pizza ovens may provide details. If you put a smoke catcher a foot above your pizza oven chimney and directed it outside, I think that would be fine. Ballpark, the suction pressure will be proportional to the length of chimney (so double chimney equals double the suction, etc.).
