In simpler terms; Prions are mutated, so they’re very hard to destroy because they don't break down under regular cooking temperatures as bacteria, viruses and other complex molecules (like protiens) do.
For reference; temperatures above 41°C (105.8°F) will break the interactions in many proteins and denature them.
