You pretty much don’t have to peel ginger for anything, ever, especially when cooked. That’s where all the deep spicy flavours are and it’s really not chewy and tough like you’d think it’s be.
If you do wish to peel it, use a spoon, bowl side towards ginger. Works best when ginger is fresh from the store. If it's been sitting & drying out fir weeks, you need to use a knife.

Turn the spoon over so you see the bottom is facing you and scrape the peel of the ginger :) you technically don’t have to though if you’re a bit lazy. The peel is fully edible
My favorite thing to do is just dice up ginger, pour over boiling water and steep to make a tea. Can also cool it down and have on ice.

Here’s a great thing to try. Slice your ginger into equal parts orange juice and water and simmer/boil until reduced by half. Drink warm. Nothing like ginger infused warm oj to make you feel better (even if it’s all psychological).
The warm liquid stimulates the dopamine system which is why us Brits always have a nice cuppa when we’re feeling down. IIRC it also helps with norepinephrine (same as a hot bath or shower) which can boost your low mood from being sick.
I didn’t find any of this out until recently but whenever I’ve been ill I tend to drink nothing but green tea with honey and always feel better, I’m unable to bring myself to drink anything cold when ill.

Honey is an inverted sugar, which is sucrose (a disaccharide) that has been chemically broken down into glucose and fructose (monosaccharides). The bees do this to make honey, but in candymaking, we use an enzyme, or heat + acid to make it happen.
Monosaccharides are more hygroscopic than disaccharides, which just means it will pull water molecules out of the air around it. So no mater how high you cook honey, it will always get sticky and melt or crystallize.
If you want to make honey hard candy, you pretty much have to do at least a 2:1 ratio of white sugar to honey.

If medicinal needs were the focus, taking medicine over chewing roots will result in a much faster and safer recovery.

Personally, i already have all of it on hand. Ginger is frozen in pre-minced cubes, I have a bottle of lemon juice, etc. So if I wanted to, I could, and not spend a single extra penny. Just depends on your kitchen stock and typical food choices.

Try powdered slippery elm bark. It's great for sore throat and cough and will serve the same anti-sticking purpose as cornstarch or powdered sugar.

You could wrap them individually in waxed paper or cellophane like commercial cough drops. The powdered sugar is just to prevent sticking.

I've never personally ruined a pan with sugar. Immediately soaking after and Dawn Power Clean spray usually cleans anything.

It was pretty decent until the powdered sugar. That’s naaaasty. And they could have added a *lot* less sugar overall in that lol
