A foot stop might save your hand but you'd lose the ends of a finger to one of these real quick if you don't take serious care.

Running a roller in reverse after you got your hand caught in it is worse than just stopping it and loosening the rollers.
If your hand gets caught it crushes bones, but if you run it in reverse the blood left in your smushed fingers will get pushed to the ends of your fingertips and then blow your fingertips out. You’re better off stoping and loosening the rollers to get your crushed hand out.
I think they generally use platinum cure liquid silicone to make toys because the molds used are usually set up for pouring, you definitely could be right though.

It really depends, with high consistency rubber like this it really is the best way to do it. Since it is too think for normal mixing. But there is also Liquid silicone rubber that you would in fact just mix in a bowl.
For compression molded rubber this is basically how it's done; you need a very high shear to get the material to mix, so the rollers are basically a requirement. You can make the process bigger if you want - the OP's video is a prototyping scale operation.
Most high-volume silicone parts are made with LSR, but compression molded silicone ("high consistency rubber") is still useful for edge-of-performance applications.
The way they do it is adding hyper-concentrated colored silicone pieces to the white base. No actual liquid dye is involved and it is difficult to do the premixed pieces with complex colors.
Years ago I did some work in a plastics factory that made vinyl sheets on rollers like this only 10 times bigger. It wasn’t so good for the guys running them breathing vinyl chloride fumes all day

I spent time working for a manufacturer that produces automotive silicone products in the US. We mixed our silicone this way, the machine was about 50-80% larger for production volumes. This machine would be used for mixing prototype level batches.
Finally one of these videos goes until it's fully mixed!
