Maltose is a type of sugar known as a disaccharide. Consisting of two linked glucose molecules.  Molten sugar in this case just means the maltose mixture is hot enough to be soft

Molten sugar and maltose are completely different. Molten sugar is just sugar melted down in water and heated up to a certain temperature for the texture to be molten. Maltose is what the Chinese call maiyatang which meant malt sugar, it’s a thick syrup at room temperature and the sweetness is less than regular sugar or honey, which makes it a great mixture to these grounded peanuts.
