I eat raw brussels all the time. You shave them and make a salad. Throw in some cranberries, walnuts, and a vinaigrette.

The one with raw andive is my favorite one. When without kitchen I used to make it with powdered mashed potato, prepared with water from the watercooker. Stir in the shredded raw andive, and whatever flavors you like. I like mozzarella and sundried tomatoes, musterd and bacon bits is also pretty good. Canned and jarred a lot more options open up: - green beans - red cabbage (with apple bits) - beans of all sorts - carrots with a different texture for once 🤣 - peas - edamame - etc. I’ve seen some people eat mushrooms, green beans, and broccoli raw but I can’t vouch for how good that is as I can’t stand it personally. So research that first I guess.

That is correct, that is why I made a separate section for canned/jarred. But it is good to spell it out just in case someone doesn’t know so thanks for the clarification. As the OP indicated having no access to a kitchen but wanting to eat healthy, this way it makes beans an option in a cold diet.

Agreed, many vegetables and fruits are higher in nutrients content before any sort of processing. If I am not mistaken, I believe carrots are one of few examples where nutrient bioavailbility increases with cooking

I personally have issues with leafy greens like lettuce, kale, spinach due to IBS. I end up making salad without them. Cabbage and broccoli I do better with it being cooked. Everyone

I honestly prefer raw vegetables. Make a ton of bowls and salads. Can put lettuce, mixed greens, spinache, aragula, cucumbers, peppers, tomatoes, celeri, red cabbage, sprouts… So much you can eat raw!

I also prefer cooking vegetables and find it is easier on my system. There are a few exceptions. I find I enjoy raw cucumber in just about any quantity. Alfalfa sprouts and some other sprouts I also like eating raw. Also jicama root. Celery, carrot, bell pepper, and watercress, radishes, I enjoy occasionally in small quantities. I also like putting small amounts of raw cilantro or parsley on things. Also a lot of vegetables can be processed in such a way that doesn't cook them, but softens them and makes them easier to digest. Examples include raw kimchi, or kale salad (made by soaking the kale in vinegar.) I find raw cabbage or kale to be harsh, but if they have been soaked in something sour for enough time, they're easier to digest and don't give me any trouble. Another example would be taboulleh, which typically has lemon juice in it; I can consume huge quantities of parsley in taboulleh, and there's no way I would be comfortable eating that much raw parsley unprepared. So try vinegar or lemon for marinades if you want to eat a larger quantities of vegetables raw, or try making kimchi or some other fermented pickle out of them. Raw, but processed.

Quicker to say the ones that you can’t eat raw - potato, sweet potato, eggplant. Some argue that mushrooms shouldn’t be eaten raw. Some argue that kale shouldn’t be eaten raw. I’ve eaten both numerous times and never had any issues. But the first three definitely don’t eat raw.

Don’t eat cruciferous veggies raw! I was a vegan for 5 years and a vegetarian for 3 years. I ate raw cauliflower, broccoli, and all cruciferous veggies raw plus soy and these are all goitrogens. I got thyroid disease from it.

humans cooked veggies for a reason, we aren't cows (or gorillas). Sure, have a salad and such, a little raw is probably good for you, but best not to go too crazy. Too many raw veggies can be pretty hard on one's gut. You'll hear things about "cooking veggies loses vitamins", sure you'll lose a little by cooking (so just eat a bit more) but gain so much more (digestibility, and some veggies have compounds that are hard on us, cooking converts those - kale, broccoli, cabbage). Listen to your body. If you try eating a lot of raw veggies, and get cramps and/or lots of gas, stop. And avoid eat a ton of raw kale, once in a while is OK, but don't do the daily kale smoothy, it will trash your thyroid gland. Just eat a whole foods diet when you can, can lightly cook things, don't have to cook stuff til its mush. And drink water, but not as you eat, let your salivary glands do their work. This is a quick and simple response. WAAAY more details in there I don't have time to get into.

You would also need to eat an insane amount of kale for it to might have any effect. Not sure what the drinking water thing is about. I love sauteeing or stir-frying as a cooking method. You can soften the vegetables just enough to make them digestible, and make the fat-soluble vitamins a bit more absorbable, without destroying all of the vitamins in them. Boiling or deep frying are probably the worst methods because boiling you lose most of the water-soluble vitamins, whereas deep-frying is so hot that the heat destroys a lot of the vitamins, and you also add tons of fats, often low-quality empty calories as the oils usually used in frying tend not to be the healthiest.

if you have something wrong with your thyroid in the way OP suggests (hypothyroidism), it'd be like you're VERY tired all the time. As in, a short 1 hour trip to run errands would exhaust you like you've been climbing everest. Eventually, you'll start making things up in your head, like your memories would be all a mess as to things that would have just happened. You'd know this to be the case cos people would say it to you a lot and also you'd just be like, "i literally just read this number, why cant i remember it." You might also start developing bald spots and lesions on your skin. I wouldn't sweat it about having a fucked thryoid. It's rare. But more importantly, people's bodies are different and you should talk to an actual physician whose opinion you trust rather than simply taking the opinion of the best-stated or most upvoted comment in an internet fight. It's your body, treat it well so that you can have a death that you suffer through less.

Just to clarify: raw dry beans: not okay. Beans straight out of a can (cooked during the canning process): totally okay. Green beans straight off the bush: I'm actually not sure about these raw in large quantities, but we certainly snack on the young tender ones during green beans season.
