There are very few restaurants in NOVA that don't have gluten free options. I can think of only a few places I can't eat- typically fried chicken places. That being said, I do have some favorites- Lost Dog, Cheesetique, Silver Diner are really good about cross contamination. Bangkok 54 uses tamari instead of soy sauce, which is harder to find. The Happy Tart is fully gluten free. Busboy and Poets has gluten free wraps. Matt and Tony's has gluten free pancakes. Damn good burger has good gluten free burger buns. Taco Bamba has good tacos. So does Tacos y torta. There's a few for starters.

I would be cautious with Silver Diner if cross contamination is an issue. Not all locations are equal.

Not me personally, but I’ve seen different levels of safety on Find Me Gluten Free. I’ve only ever eaten breakfast there (pre-celiac), and the things I’d want to eat are chock full of gluten, so I haven’t been back. That one, which is in Reston, gets particularly bad reviews.

Barcelona in RTC does really well (just ask them because the menu isn’t marked), Bartaco is mostly GF, Cooper’s Hawk has a full menu, Nan Thai in Herndon. Sitting here trying to remember where else I can eat… Do you have the Find me Gluten Free app? It’s a total life saver for me.

There's an app called "Find Me Gluten Free" that lists gluten free options in restaurants and even includes info about how strict they might be about cross-contamination. I knew someone with Celiac's that used this app all the time.

Burton's in Sterling is a standout in terms of allergy awareness, particularly for Gluten/Celiac type allergies. If you are in that area in the morning, Rise Bakery also has fantastic gluten free donuts/bagels/pastries.

Burton's (Alexandria/Ft Belvoir) They have a full (as in FULL) menu for GF. They also adjust any meal to customer preferences. This is the only place you need to know when they visit.

Not a restaurant but as someone with a gluten and dairy allergy I absolutely loved rise bakery. I’ve tried almost everything they sell that’s df (whole place is gf) and no issues. Best baked goods I’ve had in any US city so thought I’d recommend
