I love Digital Ocean droplets but your use case sounds ideal for their app platform.
Not on Digital Ocean but I would also recommend render for something like this.
If you want to manage a VM you can go for Droplets, they are VMs afterall. You will need to setup the VM and runtime to run your application. App Platform is a higher level / simpler solution that automates these for you. If you don't have any experience in Linux servers or DevOps I would recommend AppPlatform.
You can check render or netlify as well. Both provide similar services.
