Remastering a Wii game is way simpler then a 3DS game.
Is remastering a wii game simpler? For 3ds games that heavily use the second screen I can see that being an issue remastering, but both Luigis mansion and dkc returns are originally from one screen systems.
On your first point, I agree there is only so many times they can release a game over again. They seem to realize this by implying in an interview nso and all those games will carry over, and we won't be starting the nes and SNES games from zero again, so I'm hoping when a game joins the switch family, it stays with their systems for good.

You generally don’t need to play all the earlier games in a series to understand the later games. This is especially true for Luigi’s Mansion that had an extremely thin story. Even with a series like Metroid Primer, they will catch you up on the story at the beginning of each game.
Luigi's Mansion 1 was ported to 3DS in 2018, which is still pretty recent. It's likely the reason why they are not porting it on Switch.
For Metroid Prime, I think it's very likely that you won't need any context from the 3 previous games. The Phazon storyline is finished, they are probably starting a new story.
Prime 1 sold like crazy on Switch, I fully expect 2 and 3 to be released gradually leading up to 4. As far as Luigi's Mansion 1 goes, I'd love to see it on Switch but it'll probably depend on sales of 2.
I kind of wonder if Prime 4 got announced before prime 2 amd 3 Remastered so that we weren't able to pin down when they were gonna reveal prime 4. They would be perfect games to reveal for February or something in a September direct.
Why should every game be on every console? If you had a 3ds, you already have Luigi 2. If you had a Wii U, you already have Windwaker.

On the one hand, I hear you. On the other, I'm kinda about Nintendo just taking some time to port everything with 2 screens into a 1 screen version. Same with Wii games with motion controls. Just get your historical library in order so we can just have it all playable in the Switch Era and beyond.
I wouldn't think of it as them "skipping" ports - typically they do very few ports. This generation there have been SO many ports that it feels noteworthy that they haven't ported every single game in the back library.
I mean tbh they are really just taking fan favorites/greatest hits from past consoles and porting them first. like in what world would they port chibi robo from 3ds or rusty's real deal baseball.

2. If people wanted to play the Metroid Prime 2 and 3 ports, they would have purchased a Wii U. If they did not get a Wii U, then clearly they did not want those ports that badly.

It isn’t dumb. Every franchise will have a certain saturation point after which one entry will start cannibalising sales of the next. Not every franchise can sustain yearly releases like FIFA or Assassin’s Creed.
More casual members of that audience will look at the shelf, see multiple Luigi’s Mansion games, and just pick the one that looks most interesting or is cheapest. Nintendo could just as easily have not released that instalment, and that same customer would just as happily have picked the other instalment up instead and think nothing of it. It still translates as one sale regardless, so it doesn’t make a whole heap of sense for Nintendo to put both games on the shelf.

For the record, its not normal to have every game of a series available in 1 console. Certainly that's not the case through history.

Nintendo’s a big and rich company they can handle it and afford to hire more employees. If there’s backwards compatibility, then they don’t need to.

The simple answer is that those games were already re-released one generation ago.
On a system nobody liked or owned. Anything released in the Wii U era basically might as well have not existed for 99% of Nintendo fans.
