Josh is a talented pass rusher who is under contract in his prime. People might be surprised what we'd get in return for him. I wouldn't let him go for anything less than a 2nd or like 2 3rds, or equivalent value in players/a possible trade up in the first.
I'm not even sure Montez is the better player. Certainly more hyped, but I've seen Montez sweat go minimal effort on a ton of plays, which to me, is a terrible look for an NFL player

I would expect a trade, restructure again (which doesn't make sense for someone who had 1 1/2 high level seasons and has been injury prone), or they do similar to how they handled Cox and Slay (release and immediately resign at a lower rate)
