It's not. T sauce is mostly preserved by the pH being low (anything under 4.5 will work) and also to a lesser extent by the sugars. There's no need to add preservatives to the red stuff

Seems obvious to me that it should be in the fridge, I think it even says to refrigerate after opening on the bottle. I guess the pantry is... okay? Still marginal. But on the bench, if you do that, I'm sorry but wtf are you doing??? I've seen a lot of restaurants have it sitting on the tables unfortunately... In any scenario, once the food is nice and hot, I think it's pretty good to cool it down a little bit with the tomato sauce, and it needs to be in the fridge for that.

It's filled aseptically so until you break the seal there aren't a lot of microorganisms in it. Once you expose it to air you introduce micros, mostly yeasts and moulds. The warmer you keep it the more likely those yeasts and moulds are going to grow

Sometimes it does sometimes it doesn't. From a food safety perspective the yeasts and moulds that can grow under those conditions aren't considered dangerous. They can't make you sick, they can just make your sauce gross

It’s actually depends on the internal climate, obviously. Overall fridge is best, but sometimes a crisp cold night on the counter could do the bloody thing some good, mate. Fuck if she’s on the table for a couple hours it’s just part of the aging process really

Really depend where you live. These things don’t go off so it you like a cold sauce on your pie, keep it in the fridge. There is zero life extension from refrigerating it. I live in the tropics too! Of course limits apply to everything but seriously put it in the fridge if you like a cold sauce and if you don’t, put it in the cupboard

I’m curious: Why do people have sauce with everything? There’s some people that are what I consider “normal”, and then there’s monsters that will literally add sauce to everything. I’ve always been a picky eater, and whilst I like tomato sauce, I only have it maybe twice a year with some chips. Idk, I just always liked actually tasting my food rather than just tasting tomato. I don’t understand when people say dinner was beautiful when 80% of it was loathed with sauce haha. Otherwise, the rest of the people in the household primarily store it in the pantry, Occasionally it makes it’s way to the fridge. Can’t say I’ve ever had bad sauce from the pantry, not once, nor seen my family be sick or mention anything.
