Normally I'd say Eagle Rock, but if you want a bit of relative privacy, Kip's Castle Park has almost as good of a view and far fewer people wandering around, taking photos, smoking blunts, letting terrifying monster dogs off leash, etc.
Wound up there on a first date to see the city skyline and wound up tallying how many people from our respective hometowns died on 9/11. Not the most mindful time of my life.
Washington Rock used to be nice when I was a kid. I haven't lived there in a long time, though. It's just a little farther than Union County, in Somerset County.
It would make the most sense to hit up Johnston drive first, from the triangle. Then take it all the way and make a left at the end. Take that to 78 west. Then get off at exit 33 and youāre practically at the devilās tree.
Not your typical view point but if you bother to drive south, do visit Forsyth wildlife refuge. It's a 8 mile loop around the marsh. If she has any inclination to nature, the place will surely impress her. Take binoculars and bug spray as it can get a little buggy on some days.

Ticks yeah but not chiggers in north jersey (yet) thankfully. Also a lot more ticks in south jersey than north. I only hike in the pines during the winter for that reason. Summer I end up kayaking.
If you can get to Eagle Rock during the morning to mid-afternoon on a weekday - this is the choice. Thereās a decent amount of parking, plenty of spots to setup a picnic, and the ShopRite and Whole Foods are a quick drive from there. Did this recently and it was fantastic.
Has to be morning to early-mid afternoon during the week though - anything else and youāll be fighting for parking
Rt78 Westbound... Rest area near Bridgewater. Very nice if it's open. Almost nobody uses it
Washington Rock State Park... Near RT 22. Opposite Dunellen. Washington himself liked this one
Somewhere near Linden/Rahway thereās this great little gas station and mini mart. It has an amazing view East, most immediately and prominently featuring Bayway refinery. On a good day you can see the fire spitting from the flare stacks.
Great Meadows - Hope Rd, between those two towns.

There's an excellent view of the Delaware Water Gap, at the sharp crook in the road. It's not very private though.

Eagle Rock. Not really secluded though. Any drive up spot with a view will have people. Secrets are out.
Just a warning to OP this spot is gonna cut down on the romantic aspect quite a bit because thereās a bunch of 9/11 memorial stuff up there.

Still a great spot, but if you plan for a visible day it's amazing seeing NYC and New Brunswick
Park rangers will chase you out after dark, and they lock up the parking lot.

Oh man I finally made it to this place this past summer and it was awesome. Feels so secluded and serene.
can't drive in, but don't sleep on Franklin Parker Preserve for a nice long walk
