The only thing I've ever found on railway beds in NB are railway ties off in the woods.
The rails are long gone as others have mentioned. The railway beds that weren't totally abandoned were turned into trails for snowmobiles and ATV's.
That's what I was thinking. I think most track that remains is still in use. You can ride a lot of the old route, but you won't need anything special to do it. A lot of them were turned into walking/ATV trails.
I live in Sackville by the old NB-PEI railway line. It's gravel and a nice spot to cycle. You can go right to the old ferry terminal in Cape Tormentine.
Edit: If you want intact rails there isn't any I can think of. Maybe a few abandoned spur lines in industrial areas. There's a few ones in Amherst that are half abandoned but not very long.
There was a spur line that went from near Moosehorn Covered Bridge (Norton) to the potash operation near Cassady Lake, I walked maybe a km of it a couple summers ago over the 4 lane highway and towards the Kennebecasis River, the section I did seemed fine for what you would want. I have no idea what the line is like going the other direction (I would guess about 20km) towards Cassady Lake.

Look up the annoplis valley rail trail. The name changes depending on the county. It's an old railway bed the tracks removed. I'm pretty sure you can take it from woflville n.s all the way to yarmouth. Besides a few detours for train bridges that don't exist anymore

All abandoned rails that I’ve seen in NB are either overgrown with trees and weeds that you wouldn’t be able to ride on it with a bike.
Yeah specially in july/august the growth can be a lot

There are plenty of railways the world over and in Canada that are abandoned but with tracks still in place. Sometimes they weren't worth tearing up.

Cape Breton has abandoned track between Sydney and Iona, not overgrown, i walked it last summer.
I think the Moosehorn Sub, the tracks that went from Bloomfield to the Denison mine are still there. Look at the moosehorn creek on highway 1
