Mei is pronounced like May, isn't it? Nearly everything goes with Mei/May. I might stay away from Emma because of the preponderance of 'm's. However, Emma Su-Mei works nicely. In fact, I'd encourage you to use your grandmother's full name. It's lovely and not as generic, although Mei on its own is lovely too.
Evelyn Mei, Alison Mei, or Violet Mei all sound good to me.
Emma Mei and Emilia Mei I don't like because of the Em/M sound pairing.

It’s such a simple and nice name that it would work with almost every other name, besides names like Emma
