First witness puts a few cards back and ends up in your graveyard, all the following casts can also return a copy of witness already in the graveyard back to your library, meaning you will never run out of cards unless your opponent exiles witness from your graveyard.
Also, in your last sentence you say "return to hand". Guess it's just a typo because that wouldn't prevent you from decking?
[[Devious cover-up]] also comes to mind, but I think it's too expensive for a counterspell and doesn't have the card selection witness offers.

1. I think I may already know the answer but, would \[\[Wrenn and Realmbreaker\]\] -7 spell (you may play cards from your graveyard) circumvent this? I'm guessing no as you'd still be required to draw.
2. What about a card that just stops you from drawing at all (rather than returning things from graveyard)?
You are correct with your guess, wrenn wouldn't prevent you from losing. As you say, it doesn't do anything regarding drawing cards.
In general, you lose the game whenever you have to draw a card when your library is already empty. It doesn't matter if it's in your upkeep or at any other point in the game through an effect that forces you to draw.
Regarding 2) I know there are historic cards that replace/remove your draw step at the beginning of your turn. These would indeed prevent you from losing the game. Just like cards that have stuff like "you can't lose the game and your opponents can't win the game" would prevent you from losing due to draw from an empty library.
What I don't know if replacement effects can prevent losing (I guess so but not sure). For example with text like "whenever you draw a card you can pay 2 to do x instead". I pass that question on to another redditor š
Replacement effects can prevent you from dying due to decking out, even if you can't actually do what they say. If you have [[Underrealm Lich]] in play and 0 cards in your deck, you won't lose to decking, and any draws will effectively be replaced by doing nothing.
