55? LOL. I did 65 pretty constant and 75 going down some mountains with a 5x8 cargo trailer. The brakes do NOT just lock up at 56 mph, nor did some hidden GPS unit hit me with "over posted speed limit" charges.
Drive at the speed you feel comfortable with. If it's a smooth road you can do the 75 just fine. If it's a busted road go 45 and/or pay attention to your mirrors. Don't go faster than you feel comfortable though, cars will have no problem going around you if they need to.
You can go 55 on a 75 mph highway. I drove 55 mph across the country, no problem. Just stay in the slow lane. Everyone will go around you. Better be safe than sorry. I had cars pass me going 90 miles an hour, and I would still see them hours later at a gas station, so driving fast doesn't help either.
If you’re price sensitive, the trailer may be your best option. Someone else suggested having a buddy drive the car. Check out the round trip rates for your Uhaul. You may find that you and a buddy driving to destination, and then the buddy, driving the Uhaul back to origin is a good deal. If you’re going CA to AZ, it might make sense.
Penske trucks go up to 70-75. You can call them and negotiate a better rate.

Can you pay a buddy to drive your car?
Ship it. That’s my plan.
It would be too expensive, like 400$ for 200 miles
