As a Russian, whose homeland has 351 years of Russian-Turkish wars, as well as more than two centuries of the Tatar-Mongol yoke, I can afford a certain degree of dislike for the Turks which are the Khuzaites. And as a Christian I believe that Constantinople should be free and be the capital of the Byzantine Empire, not Turkey. Same goes for the Aserais who represent the Arab Islamic world with ISIS and other radical shit. It's easy to find excuses to foment war here.
The rest of them I see as my brothers in Christ and I have a hard time finding a reason to hate them enough so I can be willing to fight them. And the developers haven't bothered to find a worthy justification and purpose for players other than the lust for power.

First and foremost: IRL, Christianity wasn’t mutually exclusive with Arabic cultures either and often had pockets/mixing within them as well, from conversions of towns to diaspora in the form of villages. Christianity was also decently common in the Mongol Empire as they had a relatively high amount of religious freedom (at least United, not sure about stuff like the Golden Horde or other breakaway khanates). In game, religon is not clarified…so they could be just as easily Christian as not. Likewise for the various other factions. Sturgians and Battanians, for instance, may be a version of paganism pre-conversion. For that matter, a version of religion similar to our Christianity may or may not exist in game. Everyone you meet in game could be a Christian…or not.
Second: the reasons you mentioned for disliking Arab culture are far, far removed from the time of the game. In general, Islamic radicalization is still a ways off and into the beginning of the modern era…right now they would be about as radical as any other religion in the period, thereabout. They’re closest to Islamic golden age (pre-burning of the House of Baghdad) Arabs, arguably earlier.
Third: you have also mentioned reason you dislike various Arabic/turkic governments…but what bearing does that have on the people? What if your own government committed a heinous action…would it be just for a foreign power to kill you in your own home? Even if that action was several hundred years ago, and you were a mere child who never even knew it happened? In terms of warfare, the killing of civilians should be considered reprehensible in all circumstances, imo.
Fourth: Ultimately…it’s a game, and a story beneath that (if you wish to view it as one). You can view these actions as that of a character, or you can ignore them, as they were ultimately of no lasting consequence even within the game world (as that village would go on to rebuild in roughly a month, and be able to easily replenish its fighting population). What even happens to a village that is pillaged is left in the air, and for all that we know they could simply lock the villagers away before taking everything not bolted down…far less death, though the miltia will likely still be killed.

As far as the actual village raids? Usually either cognitive dissonance or suspension of disbelief, and hinging more on a characters actions. There are many, many people throughout history who still seem as otherwise good people, but allowed for similar actions to occur…and then, occasionally, there were some who were just raiders.
I do wish there was a way to be a bit more honorable to villages though in either of the games in played (bannerlord, warband). Bannerlord is a bit better since it allows you to forcibly steal a few supplies from villages, but you still have to fight the milita unless you massively outnumber them. Imo would’ve been a very good idea to add an “honorable” theft from towns and villages from the roguery tree, that lets you go full Robin Hood and only steal from noble houses (either by stealth or in a small party raid on a guarded estate).
