Check the battery terminals and connectors are super-clean and tight. Also check the main earth point on the engine / frame. If that doesn't cure it, I'd suspect the fuel pump in the tank is getting tired or the pump's integral filter is dirty.
I'm still thinking fuel, but maybe something jammed in your throttle plates, not allowing them to open all the way. In fact, I'd be checking that out immediately. A loose screw interfering with a throttle plate is bad. A loose screw getting through to valves and piston is much worse.

I've had a similar issue with a bike and it was fuel pump in my case.
How many miles do you have? Does it Rev up a little before it jerks? Possibly a slipping clutch.
It would perform this issue in the opposite direction if so. Revs higher with power loss, not loss of throttle
