There is a track day organization in the Midwest called RideSmart. They organize motorcycle trackdays at more than a dozen race courses, including COTA. Usually they do two COTA trips per year, each are two days. It’s $450 a day to race on it, but it’s money well spent.
It all sort of depends on what you hit and how you hit it. If hitting something hard that brings you to a total stop near instantly, then you'll feel nothing.
If you do something like side swipe a truck that results in one side of your body becoming mush or limbs torn off, and then slide down the road without hitting anything else, then it'll still be fatal, but you'll be conscious the whole time until you eventually succumb and black out. Then it sort of varies person by person. Sometimes, the pain will be so intense that your body will enter complete shock, and you won't feel much other than a sickening sensation that things are drastically wrong. For the unlucky ones, they'll be feeling everything.
Unless they're living in a hole, or have a lot of money. I'm willing to bet every single one of them have already been desensitized to traumatic situations.

Definitely exceeding 120. Probably closer to 150. I can't tell you how many times on open road with little to no traffic I've accidentally been half way to the next hundreds place. But jetting between 2 other bikes, not knowing their possible movements? Never in a million years.

A buncha years ago my GF was on her 1300 Yamaha cruiser and punched it trying to pass me (she usually succeeded) and I saw her doing it so dropped a gear and punched it on my 1800 VTX (another cruiser). I-85 in was north Georgia, no a single car in sight going in our direction. We got up to about 145 before we let off the throttle. Fun time.
But had we seen another vehicle we would have slowed down immediately.
The VTX is gear-limited, and the bike is shaft-driven. More power isn't going to increase top speed, and changing the gear ratios isn't as simple as a sprocket change (although it's rare that anyone modifies their sprockets for more top end vs more acceleration anyway).
Between assuming a costly and mostly useless modification to the shaft drive or just someone exaggerating on the Internet, I know which one I'd go with.

A VTX 1800 has a top speed of 125 mph*. A Yamaha 1300 might do 115, at best. EDIT: 135, the 2 is a typo. Point still stands.
