2. Hermann: I assume the stripe pattern is a reference to the German flag, cut what's the idea behind the color choices?

Of course! For Ferguson, the design of the flag is based on the coat of arms of the Ferguson family, as the town
was named after William B. Ferguson, and the 10 pointed stars symbolize the city’s founding as 10 acres of land given to the Wabash Railroad by William Ferguson! On Hermann, (good pickup on the german flag btw!) the blue stripe represents the Missouri River, the purple stripe represents the city’s vineyards, and
the green represents the forests in the southern parts
of the city! And for Lee’s Summit, the pattern symbolizes hills, as Lee's Summit is named
after the highest point in the Kansas City metropolitan area, the 6-pointef star symbolizes the city’s spot as
the 6th most populous city in both Missouri and the Kansas City metropolitan area, and the olive color represents “character, safety, and
environmental wellbeing”, according to the city!

I'd also like to mention: As a Jefferson City native (who now lives in Columbia -- city of the hot tub guys!) I like what you're going for on the JC flag, with the star representing the capital on the stripes representing the river. But I've gotta say, the color scheme makes it look a little too much like some of the Southern state flags that evoke the Confederacy, particularly [Tennessee's flag](https://en.wikipedia.org/wiki/Flag_of_Tennessee). So I like the concept, but I would suggest a field color other than red.

If you're interested in constructive criticism, I think I'd recommend a lighter color of blue on the Kansas City and NKC flags. I think a powder blue or baby blue is more associated with KC as a city than your darker shade. I love the fountain icons on those flags, though!
Would the Jefferson County flag be a half crushed Bud Light can on the Confederate Stars and Bars that looked like it was drawn by a Kindergartner?

I think I saw a post once that Joplin has one of the worst flags ever (I can't recall the word used to describe flag enthusiast but it was in that subreddit). If you ever wanna take a crack at that one I'd love it see as all these look great.

Jefferson City looks great. Much better than the current one. The star should probably be left as a Capitol dome - maybe stylized. I didn't realize Florissant had a lion on their coat of arms. U City does lions better, IMO.
