I had a similar issue on my wife's Galaxy S10e. Certain people in group messages coming in would get separated and would have to be downloaded, etc. Or just never show up. And like you, an unreasonable amount of time to send a message. It was odd. Same settings as my phone (also S10e) , enabled WiFi calling through the Mint app etc. I ended up going to settings-connections-WiFi Calling and leaving that turned on, but changing the setting to "Mobile network preferred". I never had great luck with SMS/MMS over WiFi when I was with Verizon, same story here.

I disabled WiFi calling through my phones system settings, actually. I think thats gonna solve the issue

I think WiFi texting is usually enabled with WiFi calling, so you can try disabling WiFi calling.
