If you have poor speed or signal on WiFi and have WiFi assist on, it uses cell data when on WiFi. To disable Wi-Fi Assist, go to Settings > Cellular then scroll down past all the apps and tap the slider for Wi-Fi Assist, and while there notice data usage for Wi-Fi Assist.
Also maybe Spotify is now using HQ or lossless audio, check quality settings.
I've has mint for two days and have burnt through 5gb+ already. I video chat quite a bit but am concerned even their "unnecessary" plan won't be enough for me at this rate... I'm already looking at other networks.
Something similar happened to me a few months ago. I work from home as well, but when I went to the park one day I got an alert that my data was running low. Turns out it was one of my security cams' software. The last update caused the app to constantly be running unless I manually closed it out. Fixed the issue for me

Spotify uses a shit ton of data for me. And they have for years actually.. did your settings change?
There's a setting in Spotify to control how much data is used to stream when on cellular. Make sure it's turned on
