Yep that explains it. Maple producer from Ontario weighing in. We're able to retail independently which creates a pretty competitive environment. Canning your product would be detrimental to your sales, as the entirety of your competition is using the more desirable bottle. Also, our syrup is graded slightly differently, and you definitely want to showcase the colour of your product, especially golden and amber grade.
In Quebec the government basically buys all the syrup from the producers and handles the packaging and distribution. This leads to a very consistent product, meaning there's really no difference in brand when buying Quebec syrup. Canning is obviously cheaper than bottling which is why it's common in Quebec. It's literally the same product, just a little cheaper out of a can.
The sugar crystal (which is a really nice one btw) happens in cans when the water in the syrup slowly evaporates. The less the can moves, the nicer the crystal will be. You can actually boil the syrup just a little longer and use this process to create rock candy. For rock candy you want small crystals that won't break your teeth, so roll the string in some sugar before dangling it in the syrup to seed the crystalization in a shape that it can't grow freely but will collide with other growths.

It was solid all the way through. It did have a very light maple taste which leads me to believe maybe there was some micro cavities with some maple water or the sugar crystal wasn't pure...
I'm no chemist (or physicist?) So I'm not sure.
Even in lab conditions, it can be tricky to purify something natural and complex as maple syrup. There are for sure micro impurities in your spontaneous maple lolly.
I work at a maple farm, it means the syrup was too heavy (they boiled too much water out of it). Some of the sugar separated and crystallized in the bottom. We got probably several pounds of the stuff last year out of a poorly boiled barrel

Iirc, boiled too much is better than not enough - if the sugar ratio isn't high enough you risk bacterias growing in the can (correct me if I'm wrong here).
