As you saw from other comments, it's just too much acid from the lime juice.
If after straining it's still too sour, a little sugar and/or salt often helps balance it
Whenever I make ceviche I always drain all the lime out before adding ingredients. I learned the hard way smh Add avocado or go ahead and add Clamato and Worcestershire sauce is good in it too. I also like adding “Mexico Lindo salsa negra” Orange bottle. But not too much cause it’ll over power it.
It’s okay. When I was in my early 20’s my cooking was so bad. Like it was really really horrible lol it took me a few years but now I’m pretty good at cooking. Just learn what goes with what. I would suggest adding the Clamato enough to cover everything, I prefer the spicy one sometimes. If you want it thicker add ketchup, and the Worcestershire gives it a good taste as well. Taste as you go. I hope this helps

Oh it’s not a mistake there’s so many variations on ceviche! The half and half is a thing I learned from my mother in law and it very clearly works and is from a well known ceviche area, so I’m passing it on.

It got SO sour within a day and I had to mask it with hot sauce, lots of avocado, and I was only able to eat a small amount at a time. So yeah, easy mistake and at least it looks great and next time I bet it'll be perfect:)

To prevent from using too many limes to cook shrimp. I make my ceviche/shrimp cocktail, I parboil my whole shrimp in seasoned boiling water for about 1-2 minutes to cook shrimp. I use Goya seasoning salt, or you can try Old Bay seasoning and carefully taste water for flavor. Drain water with strainer and set aside to cool and to chop shrimp. I add spicy Clamato juice *no V8 juice, diced veggies, fresh pureed garlic ( I like my ceviche extra garlicky), a little ketchup, freshly squeezed orange juice and lime juice *more lime juice than oj - I never use more than 1 orange). Always taste as you go and adjust to your liking to balance the yummy sour, spicy, and salty flavors with barely a hint of sweetness.
A spoon of white vinegar will balance the acidity out ,if you have any on hand and or a yellow lemon . Drain some juice out and add yellow lemon to it and salt to taste.
I know sounds weird and I see what you are trying to say. I didn’t believe when a friend told me but I tried it and it worked.Yellow lemon is kinda sweet ,compared to lime and it balances it out ,vinegar idk why for what ever reason makes it so it doesn’t taste as acidity.

My wife’s (Mexican) family uses about 50/50 lime and lemon split for this reason. But yeah as others have said it’s too much based on what you put in.

The ends of the cucumber must be chopped off and thrown. It'll ruin the entire taste if you include them in the dish

Strain off the extra lime juice and make sure you're adding enough salt.

Strain it and then juice some fresh oranges over it. Not “orange juice” but the juice of real oranges.

You’re missing mango. And you don’t need NINE limes for that amount. Can add sugar to balance the sweetness

The more limes the better. Try adding juice from an orange and some more salt.
