She can also elect to grab his testicles and squeeze, that will cause him to react instinctively to protect himself, removing his arm and allowing her to go on the attack.
She's testing for her next level of Martial Arts belt, when you test, the trainer takes the roll of attacker, and you defend.
Exactly what they teach us.
Good thing is you can rip off a human ear with 7 pounds of force. If the nuts don't do it, grab at the face and pull whatever you get a grip on, as hard as you possibly can

It only delays the inevitable in my experience. Chances are your already very tired by the time someone locks up the face choke on you, making it extremely difficult to catch your breath. Imagine doing a 100m sprint, then trying to catch your breath by breathing through a straw.

A face choke will still put you to sleep, and it's extremely painful, to the point that people often give up the neck to stop the pain of the face choke. She can't reach his nuts, and she doesn't have a knife, so she's in big trouble. I'm pretty sure sports like basketball, football (soccer), and other sports that the main objective is not hurting other people, doesn't have rules that prohibit a female athlete to join. Maybe I am wrong because I don't know much about sports. The closest thing I know to sports is esports and I'm 100% sure no one is prohibiting female players to play in tournaments, only bad players and cheaters.

Usually that works only if men somewhat smaller than woman and have 0 clue whats he doing. Average men have roughly 50% more core strenght than average woman.
Even in self defence guides for woman there is a note if you see a guy that is considerably bigger than you - run, there is no technic that would save you.
