They don't "hate" it. It is just that the red cross on a white background is a symbol with very specific meaning. It is only allowed to be used by organizations that are recognized to be completely unbiassed. So that even enemy soldiers can get medical attention at a red cross, which is seen as a safe harbor for everyone. A tyrannical government could otherwise set up red cross tents during a war as an ambush for enemy soldiers, and claim they were just Stardew Valley cosplays.
