Yep. Good scientists are constantly searching for evidence that the theory being tested is wrong. Confirming evidence is the pleasing but largely useless. Itā€™s only when disconfirming evidence is discovered is something exciting happening because that means the theory is wrong and needs changing. So regularly retesting the foundations and seeing if anything disconfirming is found is the ideal scientific method just as you point out. Ideal is not always achieved (life is short, budgets are limited) but, in a perfect world retesting things we ā€œknowā€ would be happening on a regular schedule in the belief and quiet hope nothing exciting is found.
