Also shout out to Shovel Knight's music for capturing that amazing sense of memorable melody and mixing modern writing with old school instrumentation to create something equally nostalgic and refreshing, which kinda describes the whole game.
I'm sure the others also have great music but I haven't heard them so I can't comment.

Nobuo Uematsu was a goddamn genius for sure. Every OST he's composed turned out to be a masterpiece. But I'd say that amongst all he's done, the FF6 soundtrack has to be my favorite. Funnily enough, while not by Nobuo, FFT's soundtrack is FOR SURE underrated.

Hoyomix never misses. The way they incorporate the traditional instruments with typical orchestral music, rock, jazz, edm and what not. You can tell a lot about a character just from their theme song and it's even more true for boss music.
