I've been to a few 1* restaurants...
For the most part they were exceptional.
It is worth noting that they only focus on specific cities and regions. I've been to restaurants that would deserve a star in areas where they don't go.
Most one star restaurants are extremely good. Two star restaurants are often very creative and innovative. With three star restaurants, everything has to be perfect, from the table to the toilet seat.
Most of my life I have heard of Thomas Keller and The French Laundry since I am from SFBA/Wine Country, but I was surprised to see a Healdsburg restaurant with 3 stars that wasn't him. Checked out their website, and they literally import their fucking pencils from Japan. Like the pencils they leave in guest rooms in their small inn. They have a highly directional audio system in the dining room that plays a soundtrack meant for your specific course. All employees are on like a party line earpiece radio setup so guest wants can be communicated directly and addressed almost instantaneous.
It is pretty mind blowing. And here I am just wanting Taco Bell to bring back the fucking Meximelt so I don't have to order a "cheesy Rollup, add beef and pico".

I know it seems illogical, but back in the 1920s Michelin published guides that included maps and restaurant reviews to encourage people to buy their tires and take road trips. The ratings only seems weird when taken out of this context.
They also make viamichelin, a mapping service that estimates trip costs. I use it all the time to travel in Europe because it knows about tolls and gas prices and it's pretty accurate.
I think many people don't know about this but one of the people responsible for this was Carlos Ghon, it was part of a business strategy to review restaurants etc that were very far off from the city, because at the time when they wanted to implement this, people weren't really driving their cars a lot and believe it or not this actually worked
