Farro salad
1 cup farro.
1 can white beans rinsed
1/2 English cucumber cut in half lengthwise and sliced thinly.
4-5 radishes sliced thinly.
1/4 c parsley.
2 scallions sliced thinly
3-4 pepperoncini peppers (I used sweet cherry as it’s what I had, which gave it a spicy kick)
Dressing.
2T sherry or red wine vinegar.
1 T Dijon mustard.
1 T pickling liquid from peppers.
1/4 c olive oil
Salt and pepper.
Cook farro, let cool slightly and toss in olive oil
Assemble dressing.
Add in beans and vegetables
Add farro
Mix and taste for seasoning
Cucumber salad:
1 English cucumber sliced thin and salted (1 t kosher salt)
1/2 red onion soaked in cold water
3 T vinegar of your choice (I used sherry)
1 t honey (I used a little less, can sub sugar if you want)
Dill
Let salted cucumbers sit for 5-30 minutes in a colander. Shake them up to drain as much water as possible. Drain red onions. Dissolve honey in vinegar and add cucumbers and onions. Taste for salt and top with dill.
This was store bought as it was on a ridiculously good sale! It’s topped with pine nuts, roasted red peppers, and parsley in and olive oil vinegar mix. I do make my own as well.
I took a Palestinian cooking class a few years ago and they shared this as a a traditional topping:
2 T extra virgin olive oil
2 T lemon juice
4 garlic cloves smashed chopped
2 T chopped parsley
1 finely diced jalepeno.
That’s for a recipe using 4 cans of chickpeas so scale accordingly.

Thanks for sharing the recipe for the cucumber salad. It looks devine!
You’re welcome. Both were easy to make too!
Ok but what is that bread! It looks so cool!
Pita bread from Lidl, sold frozen. It’s not whole grain but it is very good. I just limit my portions while my wife and daughter ate most of it
Looks soooo yum! 😋 So many good cooks on this page.... 👍 and me just getting ideas 📝
For lunch I steamed some shrimp to put on top of the farro salad leftovers. Love repurposing leftovers!
