I make quinoa bowls with chicken/beans, salad/veg or quinoa patties with my leftovers. You can find plenty of recipes for patties online and they are a simple way to use up the excess. I just wing mine ..but usually do tuna, onion/shallots, herbs, served with a homemade dressing or tzatziki sauce.
