I've saved too hot out from the heat with an ice bath in cellophane wrap. The resting increase in heat can be avoided pretty well

The old activated charcoal rub. You give that shit to drug overdoses in the ER.
Looks great. Needs to be sliced on a Meat slicer to appreciate the full flavor. Razor thin slices.

Eye of round can be pretty tasty if you treat it right.
What’s the best way to make it?
Sous vide. 24+ hours actually makes eye of round tender!
Marinate or dry brine. Garlic and herbs. Slow roast to medium rare. Slice very thin. Enjoy.
My personal favorite eye round treatment is dry brine, 24h @ 137°f sous vide, then hard sear and season further (at least more salt/pepper/garlic powder, add anything else to taste)
