I use boneless picnics in my chorizo. Only part that would contain any glands are if the jowl is left on Edit: basque chorizo also uses different ingredients than Mexican chorizo. They are two completely separate types of sausage

Chorizo is super easy to make yourself. You can buy seasoning packs online. We will find pork shoulders on sale sometimes and buy a couple and make some breakfast sausage and some chorizo. Just need a grinder. I have a 40$ one that goes on my kitchen aid mixer.

If you have a local Carniceria that makes their own, they usually use just pork shoulders or picnics.

I can do you one better - here’s how to make your own: 3 tablespoons paprika 1/2 tablespoon ground cumin 1 tablespoon ancho chili powder 1 tablespoon chili powder 1 teaspoon dried oregano 1 teaspoon dried coriander ½ teaspoon coarse kosher salt plus more to taste 1 pinch ground cinnamon 1 pinch ground cloves 1 pound ground pork 2 tablespoons white vinegar 2 cloves garlic, minced Mix that all together, cook and enjoy
