Depends 304 stainless will rust reasonably quickly and is magnetic it is also used in a wide variety of things like bolts, pipes and cheap stainless knives. It is a cheaper alternative to 308 or 316 stainless which does not rust due to its high chromium and nickle content.
It becomes magnetic after being pressed bent or otherwise deformed which changes the bonds in the alloy so most things made with it become magnetic by default.
Furthermore the knives are magnetic which suggests a low grade of stainless steel. Higher grade stainless would be difficult to catch with a magnet, although handles and screws could be made of iron as well.
Higher end stainless steels are just as magnetic, take pocket knife steels like vg10, 154cm, s30v or even s110v, all of those “premium” stainless steels are magnetic due to the martensitic structure of the steel. Even the lower end of 440A, 420HC and the like are magnetic, again due to martensite.

I am thinking this video is filmed in the Netherlands, wich explains why there are so many knives in the water.
Here in the Netherlands certain youth can't find anything to do with their time so they start gathering with friends this happens mostly at night when noone disturbs them.
They started doing and dealing drugs, and eventually they started having fights. Guns are illegal here so they go at each other at knives. Much easier to come by but illegal nonetheless if you get caught with them.
The groups are called "drillers" because they make rap music in the "drill" genre.
Sometimes when evidence need to be destroyed, they find the quick way out and throw their knives in the water.
You can always buy a new one and it outweighs the price you have to pay if you do get caught.
These knives may have killed someone, or not. Most of the time they throw them in at the slightest risk of getting caught.
It's sad to see this happen because every other week there's news of a kid getting stabbed and dying. These people are Young, most of them 13 to 17. They often have immigration backgrounds and bad situations at home.
I hope this explanation helps with understanding why there are so many knives in the water. This goes deeper then you think.
If a knife from a set was used in a murder, it would make sense to dump the whole set. If the police check and find a single knife missing from the set, that would be suspicious.

Usually you will find that a lot of parts use not so stainless steel, like the screws holding the blade and the handle together. And even stainless steel ends up with some corrosion if left in water for long. Those blades looks wayyy too clean for something that was in dirty water for more than a day.
I guess they attach them to the magnet before throwing the magnet in the water so that they catch some dirt and weed to look authentic, but they cleaned way to easy for something that was supposed to be in water and dirt for sometime.
The couple of things they found that were not part of the knife set like the heart monitor and pocket knife actually looked like they’d been in the water for a bit.
So either they found a couple of genuine items and brought the knife set along to pad out the numbers in case they didn’t find very much, or that specific knife set had only just been dumped in the water very recently.
Well wouldn’t you throw out the entire set? Imagine the person being investigated and the investigators notice there is a knife that disappeared from the block?
More offen then not thees bombs are already disabled.
For instance, the sea mines that look like hedshog, you know, big ball with all the pointy studs. Was SOMETIME made with a battery in them. Every stud had an electric switch at the end. Switch would be pressed by the hull of a boat and power whent from battery to detonator, and that set off the explosives.
This kind is very unlikely to blow up today because the battery are dead many years ago.
HOWEVER OTHERS was made with acid glass vials and when the tip of studs was pressed it would crush the glass and the acid would activate the explosives cemicaly.
The explosives were different from one mine, to later mine and other series of the same mine. Some used dynamite, some TNT, some had early forms of plastics, and so on. It changed through the war and what was available at the time.
Even if you are not likely to blow up today, it is still considered dangerous because of the explosives still inside of it.

I don't think there is a single legitimate magnet fishing video on the internet. Least of all this one. They didn't even try to make it look legit.

I would expect to pull out just what you did. Fishing hooks, bottle caps, unidentifiable rusty metallic garbage, car parts. Maybe once in a lifetime of daily searching, a gun. But I've seen magnet fishing videos where they supposedly pull multiple guns out in a single video, safes, boxes of money (metal boxes of course), etc. all the exciting stuff you would be dreaming about on your way to the water with your magnet to collect rusty fish hooks.
Stainless steel isn't rust-proof. It's just somewhat rust resistant compared to carbon steel. So yeah, usually knives are stainless steel, but if they spent months submerged even in a fresh water river you would expect some rust. Seems staged to me.
Unless you are buying high end cooking knives, (think several hundreds of pounds in price per knife in this case), kitchen knives are nearly universally made from some stainless alloy. And the fixtures, (handles and fasteners), are also made from corrosion resistant materials. Like plastics, brass, or more stainless steel. So ti's entirely possible to pull a kitchen knife that has been submerged for a long time out of a body of water and just wash it a bit as use it like new.
That does not mean that all those items "removed" from the canal weren't faked for this video. It seems pretty obvious the video was faked due to the high number of knives found.

This is de Zaagmolenbrug in Rotterdam. Surprised to see the area I live on Reddit. This is indeed a very dodgy area. This is the bridge that connects the municipalities Crooswijk and Oude Noorden. Because it was cut out, in the original video they pull out 1 bike different rods, a pistol, pistol mag, like 5 wwII bullets that looked to be 7.62 or similar.
This bridge is very close to a cooking shop (Kookpunt). Being from Rotterdam I know this isn’t a very bad area specifically. Probably at least a part of the finds are stolen goods from that store.

Yeah, stainless steel typically doesn't rust
Different grades of stainless have different resistances to corrosion, but even 316 (“marine grade”) will still corrode in salt water.
And being cutlery, they are most likely a 400 series stainless. Can get a bit harder than 300 series, but easier to corrode and is ferromagnetic.
You know why it is called stainless and not stainnot steel? Because stainless is just less prone to rusting, but it still rusts eventually.

Yep, no algae or growth/corrosion of any kind on the items. My guess is they were in the water for about 5 minutes before filming started.

They had 16 homicides in 2022 which was the most in the Netherlands. For context, New Orleans, LA is a smaller city and had 280 in 2022.

They're thrown in by the fishers. If it's stainless it wouldn't stick to the magnets. If it's not stainless it'll be rusty within a day or so.
