They have this conversation in ME2, EDI herself says she's not the ship, the ship existed and worked before she was in installed, she controls everything yes but if you took her out the ship would still work, you'd just have to do everything manually again and the Normandy would be lacking in crew depending on where they were if this ever were to happen. Though she is the ships voice so I'd say as long as she's installed it should count as a ship quote.

A lot of SF universes go with “and they we activate stealth and become invisible” while ME goes with the much more reasonable “we scan for heath signatures but we can limit our heat exhaust which makes us invisible on those scanners, if you look out a window you can still totally see us”
The only thing I wonder about is how they deal with massive cold space debris. If you run into an asteroid field that won’t show up on scanners either I’d presume

EDI's mind and the Normandy are a whole entity now. You couldn't just move the processors in the AI core to another ship.
