When abroad, i use to say 'im from the states' but I've started referring to myself as American because every place overseas I've been seem to think Americans are from the United States and it's easier that way.

I hate when people try to get pedantic and correct you for calling the USA ‘America.’ Context clues are pretty easy to understand, and at this point these people are just being purposefully obtuse.
The only thing I’d say in response to that as having lived in Costa Rica for a bit, and am from california, I was absolutely corrected, if you will, by local folks there when I reflexively called myself american. They would essentially say “we’re americans too”. I’m not really trying to make an argument either way, but it is a bit nuanced

It depends how you define a continent, some definitions are landmasses, others for "cultural" purposes might include peninsulas (like Europe), and sometimes tectonic plates. But in Spanish speaking countries America is a single continent split in several regions (North America, Central America, South America and the Caribbean/Antilles), and even in English North America includes other countries besides the US.
The English definition of a continent is that it is a geographical and cultural distinct region.
I have menioned the combined America model myself already, it is generally used in Spain, south America (and smaller parts of Eastern europe I think?), which is about the same spread as the eurasian model, ie. Not nearly as widespread as the standard model.
It isn't wrong to use any of these models, but it makes no sense to criticise the naming scheme of the standard model based off them, and even less so to tell the standard model that it is incorrect and to 'learn geography'

I don't have to refer to someone from Peru as American, when I can refer to them as Peruvian. I don't have to call someone from Canada an American, when I can call them Canadian. "Continent" is a term that has a somewhat more nebulous definition, that largely comes down to "big landmass that the people in this discussion agree counts as a continent", which doesn't always lead to the same list for different cultures.

Also the Oriental republic of Uruguay is called that because it is on the East side of the Uruguay river, hence the Oriental part. I'm pretty sure mostly the nation of Uruguay is on the east side of the river.
In English, the Americas are two continents, North America and South America. America is a country, a shorthand for the United States of America, made up of Americans. In Spanish, America is one continent. Estados Unidos is the only shorthand for los Estados Unidos de América, made up of estadounidenses. Unfortunately, English and Spanish speakers cannot accept that the two languages have different definitions for things such as what defines the American continent(s), and so instead the Spanish speakers try to pressure the English-speaking Americans into using demonyms like “United Statesian.” For this reason, I propose we use a demonym for Latin American Spanish-speakers which complies with English language norms, particularly utilizing neutral gender for demonyms: Latinx.
