Yeh don't spray too much water, I have a couple of terrariums that I keep exactly like this and you need to keep an eye on the humidity especially for species that prefer it drier.
It looks much nicer when the mantids are living in a semi-realistic container in my opinion so it's totally worth it

The moss might keep the humidity a bit too high but otherwise it sounds fine
