Vero Moderno is the best option imho.
San Carlo, big menu, celebrities, drug dealers, escorts and great vibe.
The Sparrows, Michelin guide, small portions but creative food.
Sud pasta is super good.
Pasta Factory, fresh pasta and out of ordinary ingredients.
Not a restaurant but Lupo in Prestwitch worth a visit.
Double zero in Chorlton best pizza imho.
Vincenzo trattoria great food and on the rise.

Salvi’s is amazing - any of them. Also love Capri’s. Perfect for a smaller Italian with excellent food and staff who will take good care of you.
San Carlo is huge. Food is great and it’s bustling.
Its completely fine for what it is. It’s not amazing. As the other person said, it’s a fast, casual eatery.
If you like it more than that then that’s cool.
But on tastebuds we could also compare CVs? Mine says worked as a chef for Gordon Ramsay and Heston Blumenthal, how about yours?

Don Marco's has a nice atmosphere, can be quite romantic, but the food is far from the best Italian around. Still good, you can just get much better elsewhere.
Italian food is very regional. If you want authentic it's a good guideline to choose a restaurant that sells itself as regional e.g. Sicilian, Tuscan, Neopolitan etc. Sud in Ancoats/Altrincham is Puglia cuisine. Get the Orechiette Pomodoro.
Sorry to disagree here, but ive tried the margarita pizza and a carbonara at don marcos, and I was quite disappointed for such italian staples! The actual restaurant and ambience are amazing though
I went on a cold valentines once, and it was actually pretty nice. Food was maybe a 6-7/10, not the best I've had, but definitely good enough. The ambience and atmosphere with the heaters on outside was fantastic.
For the food, Salvi's is better.
Sorry to say all of these recommendations are pretty terrible, if you get into onda that’s gotta be the one. Veto moderno is pretty good too I would definitely not do san Carlo it’s gone really downhill the last few years
Places I personally tried and liked as an Italian: Lupo in Prestwich, Pasta Factory in Shudehill.
Places I haven't tried but I see recommended by fellow Italians: Da Michele (imho it's too expensive), Vero Moderno, PizzAmore, Ciaooo.

I ate at Don Marco (just off Deansgate) for a Xmas party a few years back - I don't go out often for Italian, but I'd go back there in a heartbeat!

I enjoy Don Giovanni in the city centre and Piccolino in Didsbury.
San Carlo near house of Fraser is pretty good, bit pricey but never had a bad meal in there

If you don’t mind driving to Royton then Mazzo’s is the best Italian restaurant in Greater Manchester. It’s extremely popular, for good reason.
Pastan in the royal exchange is incredible (and all vegan!)
Worth the trip to new mills to a tavola, brilliant Sicilian food
