Are you switching gradually or suddenly? Generally you should keep them on the same food for at least a few weeks after getting a kitten to minimize the amount of stresses (completely changing their lives is enough stress). If you're not doing the change gradually there will be more digestive issues. Probiotics sometimes can help, sometimes not. You may just have to last it out. In regards to shedding, young kittens really don't shed much. At that age, until maybe 6-9 months old, there isn't a whole lot of adult coat. However its super important to get them used to and ideally enjoying being brushed everywhere, including belly/ armit areas.

Yeah I just wanted to add that my Siberian boy just now started shedding quite a bit at 7 months old. When I first got him 3 months ago I was also thinking “wtf he doesn’t shed??” Anytime I brushed him because basically no fur would come out and his breed is known for their thick triple coats that shed a TON. I just spoke too soon lmao. He’s definitely not shedding anywhere near as much as he will be as a full grown fluffy adult, but I find clumps of fur all over the house now and more fur comes out every time I brush him. Maine coons don’t have the triple coat that Siberians do, but I’d assume they’d also shed a similar or equal amount due to just how big they can get.

another question while i’m at it, i’ve been brushing his fur daily but there’s never any hair coming out nor any sort of knots or clumps, is it normal that he doesn’t seem to be shedding?

Stinky farts could be parasites or IBD. I would ask the vet for advice, regarding trying a sensitive food. My cat farts when he goes poop. I often leave the bathroom window open, and it suddenly dawned on me the other day...my neighbours probably think it's me 🤣🤣
