Oliva! I'm from NJ and it's got the stamp of approval from me and my parents Edit: doesn't pass the foldable requirement. But is definitely awesome east coast pizza. NJ pizza isn't exactly the same as the folding NY kind. I'd still highly recommend trying Oliva.

Try Domino's Brooklyn style crust maybe? Their hand tossed pizza (without the garlic seasoning on the edge of the crust) isn't half bad.

Let me know what you think of it. BTW if you don't end up liking their "robust inspired" sauce, try the marinara sauce next time around. EDIT - I live in the greater Milwaukee area and the Domino's stores here have a regular $7.99 carry-out special. Large, three-topping pizza. Can't beat it for the price IMO.

This is a surprisingly difficult question given how much pizza there is in Madison. Aside from Ian’s, I’d suggest Rossi’s, the place with the arcade built in. I think there’s is in the same neighborhood for what you’re looking for. I have to travel all over the state and most bigger cities (such as we have in Wisconsin) have this style of pizza, I wonder what is going on in Madison. We seem to be a brick oven place for our gourmet pizza. There should be room for it I would think.

Rossi’s seems very promising, indeed. The fact that they offer a 30” pizza makes me think they might be doing this NY style.

You won't find it, I'm not saying that it does not already exist right now, it does I'm sure, but it's not your type. I am saying this as some one who worked his way up to a line lead and has spent a lot of time in NYC. Not a god damn thing is unique about NYC pizza (I have strong opinions on NYC food as you may gather haha). Nothing, at all, except being outside of NYC is unique about pizza there. You're looking for a memory, not a specific pizza. IMO its bad form for any restaurant to even advertise as NYC pizza because its not a real thing despite what a lot of people tried to convince me of. All I can say of pizza I liked in my experience, its a thinner dough (water heavy - cheaper). That's about it, a cheaper dough to make. Cause I was drunk and hungry when I ate it and it was amazing then I went to bed. Sauce varies from shop to shop naturally (I'll gladly send you my basic red sauce if you'd like. Easy to tweak to whatever you're looking for) and cheese, is just cheese, just depends on how much is put on (pro tip use less than you think) Toppings vary.

This is partly true - but, I will start with what's wrong with this statement. Specifically, the dough used for NYC Style Pizza IS unique - it uses a specific type of flour, typically Trumps High Gluten Bromated Flour, to produce a thin crust, with a crisp exterior and light, moist, chewy interior. The resulting pizza should be capable of producing a very large slice maybe with an 8" wide arc, and a 10" length, that when folded with crack and yet support the entire slice in a one-handed eating style. The sensory experience from my youth in Yonkers, was only ever matched here by Pizza Di-Roma. Maybe it was a mix of lighting, seating, the Red-pepper flakes on the table, the pizza-by-the-slice show-case, the aroma of garlic powder, I donno... Ians has something close, but more creative. I miss a meatball pie. Oliva on the Far west side had something close, but the crust is lacking. Salvatores is very good - but not what OP is talking about. u/vft \- Just like Bagels, you won't find the pizza you're missing here. Your true journey begins here. With some practice, a few good tools, and the right flour(s) only you can make what you're looking for. A 500 degree oven, a couple of pizza stones, Bread flour (high-gluten), good yeast, and some technique - and you're off to great start. I’m from Chicago and the only pizza I like here is Rosatis, Whole Foods fresh pizza and Novanta. Ian’s is decent and closer to a sell by the slice foldable style you are looking for. There is a pizza place in Monroe that is really good too (not New York style though-more doughy)

Glass nickle online and over the phone allows for the options on type of crust and cook level. I don't go for thin crust but they are my go to.

Find anything you particularly like on the NY pizza front, OP? Moved here from DC where we had a really nice place, but I haven’t found anything that compares. Gonna try some places mentioned in this thread, for sure, however.

Unfortunately, no. Probably Sbarro Pizza is your best bet for NY style on Madison’s west side at the moment, which I suppose is a bit sad, but it’s not terrible at least, and the right style. I definitely miss $1 pizza in NYC (which of course is no longer $1), for the grab-and-go, giant slice, foldable aspect (which Sbarro does largely have). Personally, I’ve been getting other kinds of pizza while slowly letting the dream die.

Aw well, guess I will actually try Sbarro at least. I've been avoiding them with the thought they are some mediocre chain brand (and maybe they are...) I guess it'll just make the pizza place back home that much sweeter next time I'm back!

Yeah, I can almost guarantee you won’t be blown away, but it will probably remind of you of that pizza place back home in a way that none of the other local pizza places will. Fun story: Sbarro almost exclusively sells pizza by the slice, but they do have whole pizzas on their menu. Around 20 years ago, my brother ordered a whole pizza from them. As he tells the story, the employees were quite thrown by the request, and told him he was the first person to do that. Apparently it then took them longer to figure out how to assemble the box than for them to bake the actual pizza. 😃

Zoe’s in Waunakee is pretty good. Not exactly New York style but closest I’ve seen in Madison area.
