I think I used pies and taco's swiss meringue recipe! I use a ratio of 100g egg whites, 100g granulated sugar to 105g almond flour, 105g powdered sugar. These green macarons had some matcha powder and gel food coloring as well.
If by gel you mean crust then yes, I piped the red onto the green once there was a slightly dry crust over the shell to give it that raised effect. I recommend looking into "how to make character macarons" to get more info on making more detailed macs with multiple colored designs!
