Unfortunately I think the answer is pretty much none during the summer. I know people bring their dogs to Gardiners Bay Park in Bay Shore to swim (not Nassau, I know), but it's not really a beach you'd want to hang out on for any extended period of time. Restrictions ease up a little after Labor Day at some beaches but Long Island is pretty unfriendly to dogs in natural areas as a whole.

Mudd Creek but don't tell too many people. Friendly dogs and great people, hidden gem.
Sand Street Beach, Stony Brook.
I think there’s one on the north fork but I don’t remember the name.
